I feel like I discovered a secret. Green Soup. Throw whatever greens  you have in a pot with vegetable broth (chicken broth for a more robust  flavor), season, boil & puree.
Health in a bowl that tastes delicious and feels energizing. The pureed part makes all those veggies easy to eat and less cumbersome than their chopped counterparts.
Guess I am not the only one, as Splendid Table covered  Anna Thomas’s Green Soup, which she makes in roughly the same way (I majorly simplify everything I cook) with the same sighted benefits of vitality.
